This is an easy and healthy eggplant side. Lip smacking and great for a snack or side dish. Ingredients:
2 eggplants |
olive oil |
1 1/2 cups italian bread crumbs |
1 cup parmesan cheese |
Directions:
1. Cut skin off eggplant and slice into one half to gthree-quarter inch rounds. Cut rounds into fingers about 1/2 to 3/4 inch sticks. Coat with olive oil. Mix parmesan and bread crumbs. Roll fingers in bread, cheesemixture and place on baking sheet. Bake at 375 until golden brown. |
