This is the Indian version of Baba Ganoush. Easy to make. Ingredients:
1 large eggplant (1-2 lbs) |
tomato-2 |
salt to taste |
2 table spoon extra virgin olive oil/mustard oil |
1/4 medium onion sliced |
1 clove garlic (add more if yo wish) |
2-3 green chilies |
cilantro to garnish |
Directions:
1. Roast eggplant, tomatoes and chilies on medium flame. 2. Once the skin gets charred, take them off the flame and cover it so that you can peel the skin off off easily. 3. Chop onions and mince garlic. 4. Now mash eggplant, tomato, garlic, chilly and mix well. 5. Add the onions, garlic, salt and oil to it. 6. Garnish with cilantro. |
