Eggplant Chicken Parmigiana Ingredients:
16 oz chicken breast |
3 whole eggplants |
2 1/2 cups tomato sauce |
2 tsp. sea salt |
1 tsp. ground black pepper |
2 tsp. chili powder |
2 tsp. ground oregano |
2 large eggs |
1/3 cup flour |
3 tbsp olive oil |
2/3 cup plain bread crumbs |
Directions:
1. bread and bake chicken cutlets 2. prepare and cook tomato sauce with spieces 3. fry egglant slices 4. assemble parmigiana, one layer eggplant, chicken, sauce and repeat 5. bake covered for about 1 hour |
