This is another recipe clipping that Mom collected. I am sure there is one here on Zaar, but I just want to put it here for safe keeping. These are all cut out of magazines and I have no idea which magazine or paper they came from. Some are even newspaper clippings. Ingredients:
1 medium eggplant |
1 onion, small and chopped |
1 cup cheese, grated |
5 slices bread, torn into pieces |
3 tablespoons butter, melted |
1 (2 ounce) jar pimiento |
1 egg |
1 teaspoon salt |
1 teaspoon pepper (optional) |
Directions:
1. Peel and cut up eggplant. 2. Cook until done. 3. Add remaining ingredients. 4. Put in baking dish. 5. Bake at 350* until golden brown. |
