Bakes 350 degrees for 20 to 30 minutes. Ingredients:
1 eggplant |
1/2 c. water |
1/4 c. melted butter |
2 eggs beaten well |
1/2 tsp. salt |
1/8 tsp. pepper |
1/2 tsp. onion |
1/2 c. cheese |
1/2 c. cracker crumbs |
Directions:
1. Peel and slice eggplant; cut in cubes. 2. Cook until tender; drain; add butter, eggs, bread cut in small blocks, salt, pepper, onions, and cheese cut in blocks. 3. Pour in greased casserole; sprinkle crumbs on top; bake 20 to 30 minutes at 350 degrees. |
