healthy burgers Ingredients:
1 eggplant |
1 clove garlic, crushed |
1 salt |
2 tablespoons flour |
2 eggs, beaten |
1 teaspoon oregano |
1 tablespoon parsley |
Directions:
1. Cut eggplant into cubes and steam over boiling water until tender. Let drain. Put in a mixing bowl, add eggs and seasonings. let sit 1/2 hr. Sprinkle hands with flour and shape mixture into burgers. Fry in hot oil and serve very hot. |
