Ingredients:
1 eggplant
1 clove garlic, crushed
1 salt
2 tablespoons flour
2 eggs, beaten
1 teaspoon oregano
1 tablespoon parsley
Directions:
1. Cut eggplant into cubes and steam over boiling water until tender. Let drain. Put in a mixing bowl, add eggs and seasonings. let sit 1/2 hr. Sprinkle hands with flour and shape mixture into burgers. Fry in hot oil and serve very hot.
