Eggplant (Aubergine) Patties |

these patties taste good even cold , they make great sandwiches! Ingredients:
12 large eggplants |
3 eggs |
pepper |
salt |
oregano |
fresh mint leaves |
breadcrumbs |
1/4 cup cheese |
garlic |
onion |
flour |
Directions:
1. Peel the eggplants and boil them. 2. Slice them in a grinder/ processor. 3. Add the eggs, pepper, salt, finely chopped mint leaves, cheese, garlic and onion. 4. Add some bread crumbs and a little flour to get some solid texture to the mixture. 5. Form in round balls then pat into a pattie shape. 6. Slightly flour the outsides and fry the patties in a frying pan. |
