For all you who love eggplant, this is a good one! Ingredients:
2 medium firm eggplants |
5 teaspoons butter, softened |
3 teaspoons parmesan cheese |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 teaspoon parsley |
Directions:
1. Peel and slice eggplant. 2. Mix butter and parmesan cheese. 3. Spread on eggplant. 4. Sprinkle with salt and pepper. 5. Put on baking sheet in one layer. 6. Bake at 375* for 20-25 minutes. 7. Sprinkle with parsley. |
