Eggplant (Aubergine) and Rice |

Ingredients:
1 large eggplant |
1 (14 ounce) can tomato juice |
1 1/2 lbs ground beef |
salt and pepper |
1 small onion (white) |
Directions:
1. Brown hamburger with onion, salt and pepper to taste. 2. Peel eggplant and slice like a hamburger bun. 3. Layer eggplant then meat then one more layer of eggplant top with tomato juice. 4. Bake at 450°F for 45 minutes or until fork goes through eggplant. 5. Cook rice as many serving as you need. |
