These are great for a Yuletide brunch or for breakfast on Christmas morning. From the R.S.V.P. section of a December 1985 issue of Bon Appetit magazine. The recipe was requested from the Court Bistro in Saratoga Springs, New York. Ingredients:
2 cups all-purpose flour |
2/3 cup sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
3/4 cup prepared eggnog |
1/2 cup dark rum |
5 tablespoons unsalted butter, melted |
1 egg, beaten to blend |
1/2 teaspoon grated nutmeg |
Directions:
1. Preheat oven to 450 degrees. 2. Grease (or line with paper liners) one 12-cup muffin tin. 3. Sift flour, sugar, baking powder and salt into large bowl. 4. Stir in eggnog,rum,butter,egg and nutmeg; spoon into prepared tin. 5. Bake until tester inserted in center comes out clean, about 20 minutes. 6. Cool muffins completely before serving. |
