A friend brought one of these over for dessert at a dinner we hosted for them. It was delicious, especially if you are a fan of eggnog. Ingredients:

1 yellow cake mix (not the butter recipe variety) |
1 teaspoon ground nutmeg |
1 teaspoon rum extract |
eggnog |
cooking oil |
eggs |
frosting |
2 cups of powdered sugar |
1 tablespoon of melted butter or margarine |
2 to 3 tablespoons of eggnog |
Directions:
1. Prepare the cake mix according to instructions on the box (using the number of eggs and cooking oil that it specifies), except substitute eggnog for water that is called for. 2. Add the nutmeg and the rum extract. 3. Bake according to the package directions. 4. (make sure to grease the pan well or use cooking spray). 5. A Bundt pan works well for this recipe. 6. While the cake bakes, mix up the glaze ingredients together and set aside. 7. Once the cake has finished baking, let it cool. If using a Bundt cake pan, remove the cake from the pan and place on a cake plate. Drizzle the glaze evenly over the cake and serve. |
