Made using Kzim4's recipe for egg substitute. Ingredients:
1/2 cup light margarine |
1 cup sugar |
2 teaspoons unflavoured gelatin |
6 tablespoons cold water |
4 tablespoons hot water, plus |
2 teaspoons hot water |
1 cup fat free sour cream |
2 cups unbleached flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
2 teaspoons vanilla |
Directions:
1. Preheat oven to 350 and lightly grease 1 muffin tin or line with paper cups. 2. In a large bowl, cream margarine and sugar. In a small bowl whisk together the gelatine and water; beat into marg./sugar mix. Stir in sour cream. 3. In a medium bowl, mix dry ingrerdients. Add in thirds to marg. mixture. Stir in vanilla. (*at this point you can add citrus zest, mini chocolate chips, dried cranberries, etc.). 4. Spoon batter into tin/cups. Bake 13-15 minutes. Cool before frosting. |
