Eggless Tofu Sandwich Spread |

This will satisfy your taste for home-style egg salad sandwich, but without all the cholesterol. Ingredients:
1 lb tofu |
1/4 cup low-fat mayonnaise or 1/4 cup fat-free mayonnaise |
1/4 teaspoon salt |
2 teaspoons dijon mustard |
1/4 teaspoon garlic powder |
white pepper |
1/8 teaspoon turmeric |
1 green pepper, seeded and minced |
3 green onions, wiht tops, minced |
1 teaspoon parsley |
Directions:
1. Press tofu to remove liquid; drain and discard liquid. 2. Mash tofu with a fork to crumbly consistency. 3. Add the rest of the ingredients. 4. Mix well. |
