Eggless Pineapple Upside Down Cake |

An extremely moist cake that happens to be eggless and low in cholesterol! Ingredients:
cake |
2 cups flour |
1 cup sugar |
1/2 cup melted butter |
1 cup yogurt |
1 tsp rose water |
1 heaping tsp baking soda |
1/2 cup pineapple juice from can |
1 tbsp vinegar |
1 can of pineapple, sliced |
caramel |
1/2 cup sugar |
1/4 cup water |
1 tsp lemon or lime juice |
Directions:
1. Preheat oven to 350 degrees 2. In a large bowl, put the flour and sugar; mix 3. To mixture, add: melted butter, yogurt, rosewater, baking powder and pineapple juice 4. batter should not be too thick 5. grease a pyrex pan 6. CARAMEL 7. mix together the sugar and water in small saucepan 8. let simmer on low until it starts to turn amber in color 9. add the lemon juice and stir until it becomes a medium dark amber 10. place the pineapple sliced pineapple on the bottom of the pyrex 11. add the caramel syrup on top 12. pour the cake batter on top of the pineapple and caramel 13. bake in the preheated oven for 45 minutes |
