Delicious, moist whole grain pancakes for the egg-free family! Ingredients:
1 cup flour |
1/2 cup whole wheat flour |
1/2 cup cornmeal |
3 teaspoons baking powder |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon sugar |
1 teaspoon active dry yeast |
3/4 cup milk |
3/4 cup plain yogurt |
1/2 teaspoon vanilla |
1 tablespoon oil |
3/4 cup cooked oatmeal |
3/4 cup berries (optional) |
Directions:
1. Mix together dry ingredients. 2. In another bowl, mix milk, yogurt, vanilla, and oil. 3. Put the 2 bowls together, and stir just enough to moisten. 4. Stir in cooked oatmeal. 5. Fold in berries (if desired). (You can use frozen berries, just defrost them first.). 6. Cook on a medium-high griddle, with butter. |
