This mock egg salad is so good you'll never know you're not eating the real thing, and this is so much healthier. Why not make sandwiches for your next picnic? If you're not sure about an all tofu salad, mix half hard boiled eggs with half tofu, you'll still get the health benefits of eating more soy. Ingredients:
12 ounces tofu |
3 t mayonnaise |
3 t celery |
2 t minced onion |
1/8 tsp. turmeric |
1 tsp. mustard |
Directions:
1. Drain and mash tofu, mix in remaining ingredients. Make sandwiches or use to stuff a tomato. |
