Here's what you can do with those over ripe bananas.. try this before thinking of tossing them in the trash.. (i omitted the eggs on this recipe for my vegetarian friends) :D Ingredients:
1 cup mashed bananas (about 3 pcs) |
1 1/2 cup sugar |
3/4 cup butter/shortening |
1/2 cup milk mixed with 2 tablespoons lemon juice |
1 teaspoon vanilla |
2 cups flour mixed with 1 teaspoon baking powder and 1 teaspoon baking soda |
1 cup walnut (or in our case i use peanuts but this is optional) |
Directions:
1. Preheat oven 180*C 2. cream butter/shortening and sugar 3. gradually add milk+lime mixture 4. blend in vanilla 5. fold in mashed banana alternating with flour mixture 6. pour batter on a greased loaf pan 7. bake 15-20mins or until golden brown 8. leave in pan for a few minutes before taking the bread off 9. **cool completely before storing in freezer (that is if you'll have something left to keep :D) or serve hot with a cold glass of OJ.... hmmmmm i love it that way.. |
