I made some changes due to my taste preferences and really liked the result. I hope you will like these, too. The pancakes come out thick and hearty with a lovely nutty taste from the addition of flax seeds. You can also bake this recipe as waffles, but Ive not tried that yet. Ingredients:
1 1/4 cups flour (i use spelt) |
1/2 cup whole wheat flour (i use whole spelt) |
2 tablespoons ground flax seeds |
1 3/4 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon cinnamon |
1 cup buttermilk (low-fat) |
1/2 cup applesauce (unsweetened) |
1/4 cup water (i used sparkling water for even fluffier pancakes) |
1 teaspoon vanilla extract |
Directions:
1. In a big bowl combine flours, flax seeds, baking powder, baking soda and cinnamon. 2. In a second bowl combine buttermilk, applesauce, water and vanilla extract. 3. Using a wire whisk combine dry and wet ingredients making sure to incorporate a lot of air into the batter. 4. Allow dough to rest for 30 minutes. 5. Heat a non-stick frying pan or griddle and cook pancakes one at a time like you normally would. 6. Turn pancake when bubbles form on top. Each side should be golden brown. 7. Enjoy with your favourite toppings. |
