This recipe is a big hit with my youngest granddaughter. It makes a great on-the-go meal. Ingredients:
1/2 tsp. olive oil or vegetable oil |
2 eggs |
2 (8 in. or 10 in.) flour tortillas |
1/2 cup shredded cheddar cheese |
salsa (optional) |
Directions:
1. Heat a nonstick skillet big enough to fit the tortillas, over medium-low heat. Add oil. 2. Add eggs, breaking yolks. Cook until eggs are set enough to flip, about 2 minutes. Flip; cook until eggs are done (over hard), about 2 minutes. 3. Transfer to a plate. Wipe out pan. 4. Return pan to heat and increase temp to medium. 5. Place 1 tortilla in pan. Sprinkle on half of cheese. Place cooked egg over the cheese. Top with remaining cheese and tortilla. 6. Cook until bottom tortilla is light brown and cheese starts to melt. About 1 to 2 minutes. 7. Flip with spatula and brown other side. 8. Remove from pan. Cool 1 minute. Slice into wedges. 9. Top with salsa if desired. |
