Egg White & Veggie muffins |

Ingredients:
2 cups egg whites
|
1 cup chopped peppers (yellow/red)
|
1 cup cubed avocado
|
3/4 cup chopped vine ripe red tomato
|
1 cup fresh spinach
|
16 oz cooked breakfast turkey sausage, mild Jennie-O |
Directions:
1. Preheat oven to 350. Slice and cook turkey sausage in pan as directed on package using olive oil, crumble into small pieces. Chop and cube all veggies. Pour egg whites into bowl, add veggies and turkey sausage.
2. Grease muffin pan with olive oil and divide mixture into equal amounts in muffin pan. Bake for 20-25 min and check to see if egg white are no longer clear. Add additional 5 minutes depending on your oven. |
