2 tablespoons diced green peppers or 2 tablespoons red peppers
1 tablespoon shredded low-fat cheddar cheese
salt & pepper (optional)

Directions:
1. Combine green onions and green peppers in a small bowl. 2. Separate egg yolk from whites and save whites in bowl. 3. whisk egg whites. 4. Over medium heat use a small skillet sprayed with cooking spray. 5. Pour eggwhites into heated pan. 6. Sprinkle vegetables on top of eggwhites. 7. Add salt and pepper (optional). 8. Cover and cook for approximately four minutes. 9. Add cheese and replace cover for 30-45 seconds until cheese is melted.
