Easy low fat breakfast omelette Ingredients:
6 egg whites |
1 cup sliced mushrooms |
1 cup spinach |
1 cup sliced zucchini |
1 cup diced tomato |
1/2 tsp curry powder |
1/2 tsp smoked paprika |
1/2 tsp basil |
1/4 cup of milk |
1 tbsp nutritional yeast |
Directions:
1. Slice vegies and microwave til tender. 2. Preheat oven to 200c. Grease a baking dish with oil spray. 3. Beat egg whites with basil, paprika, curry powder and milk. 4. Spread vegies in the dish and pour over the egg mix. Sprinkle with yeast. 5. Bake until set and golden. Cut into 4 squares and refrigerate. Serve for breakfast. |
