Egg Stuffed Mushrooms

There are so many wonderful ways to have stuffed mushrooms. Just add this one to your collection!!!
Ingredients:
32 large fresh mushrooms, about 1-1/2-inches across
8 hard-cooked eggs, finely chopped
1/2 cup crumbled blue cheese
3 tablespoons finely chopped scallions
2 tablespoons chicken stock
2 tablespoons butter, melted
1 tablespoon fresh parsley, minced
salt and pepper to taste
Directions:
1. Preheat oven to 425°.
2. Remove stems from mushrooms and put aside for another use.
3. Clean mushroom caps and set aside.
4. In a medium bowl, stir together eggs, cheese, scallions, chicken stock, butter, parsley and salt and pepper.
5. Stir until well blended.
6. Fill each mushroom cap with 1 tablespoon of the mixture.
7. Place on a baking sheet and bake for 8-10 minutes.
8. Serve warm.
