Ingredients:
1 package(s) frozen spinach (10 oz.) |
3/4 cup(s) liquid egg substitue |
3/4 cup(s) reduced fat cheese shredded |
1/4 cup(s) bell peppers chopped |
1/4 cup(s) mushrooms chopped |
1/4 cup(s) zucchini finely chopped |
Directions:
1. Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid. 2. Line a 12 cup muffin pan with foil baking cups. Spray the baking cups with cooking spray. 3. Combine egg substitute, cheese, veggies, & spinach in a bowl. Mix well.Divide evenly among the muffin cups. 4. Bake at 350 degrees for 20 minutes, until a knife inserted in the center comes out clean. 5. Serving size is for 1 muffin (I eat 2 or 3 for breakfast) 6. Can be frozen and reheated in the microwave (without the foil cup). You can substitute or add any vegetables (lots of people use onion but I don't like it!)
