Egg Salad With Smoked Meat |

My husband smoked some pork ribs and left them on too long. We had this dry smoked pork that wasn't bad just really dry. He de-boned and diced it up fine and now it's like ham that is not salty. I've been experimenting with it in ham recipes and this one tastes pretty good. I think you could use any kind of smoked meat. The sweet and sour ingredients balance the smokiness. Ingredients:
6 hard-boiled eggs, chopped |
1 cup finely diced smoked meat |
2 tablespoons sweet pickle relish |
1 1/2 cups finely diced celery |
12 diced olives |
2 tablespoons mayonnaise |
2 tablespoons sweet-hot mustard (2 t dijon and 1 t honey may be substituted) |
Directions:
1. Combine all ingredients. Chill and serve. 2. Can be served on a bed of lettuce or sandwich. |
