good breakfast or brunch Ingredients:
5 eggs, hard boiled |
2 tbsp. lite mayo |
1 tbsp. sweet pickles |
2 tbsp fresh herbs, your favorite |
1 pepper to taste |
1 sea salt to taste |
4 english muffins |
Directions:
1. Bring eggs to boil, let boil 2 minutes. Turn stove off let eggs set for 10 minutes. Drain and run under cool water. 2. Peel eggs and smash. 3. Mix eggs, mayo, pickle, herbs and salt & pepper. 4. Spread on whole wheat toast. 5. Sometimes I'll add tomato slices and lettuce. |
