An egg salad with very little mayo, great in sandwiches with a little of Trader Joes Yellow Thai Curry sauce. Ingredients:
7 hard-boiled eggs |
1 stalk celery |
2 cups lettuce |
1 -2 teaspoon mayonnaise |
2 teaspoons mustard |
1 teaspoon dijon mustard |
salt and pepper |
Directions:
1. Place eggs in a pot, and cover with cold water. Apply to high heat until it reaches a gentle boil. Remove from heat, cover, and allow it to sit for 10 minutes. Remove from water after 10 minutes. 2. Chop the celery and lettuce into small pieces. 3. Peel and cut the eggs into fours. 4. Mash the eggs, but not too much, you want it to have some texture. 5. Mix in the celery and lettuce. 6. Add mayo and mustards until combined. 7. Add the salt and pepper to taste. |
