Well egg plants are in season now here in Greece bought some from framers market yesterday and thought of making it ....basically its an Indian recipe every home in India makes its in a different way this one i learnt from my grandmother i love it but can't eat as i m allergic to eggplants I hope u enjoy the recipe ! Read more !!!! :-) Ingredients:
1 large egg plant |
few cloves of garlic |
1 or 2 green chillies (opt) |
1 cup of yogurt |
some cilantro for garnishing |
for tempering |
1 tbsp of oil |
1 tsp of mustard seed |
1 tsp of cumin seed |
1 tsp of red chilly powder |
1 tbsp of turmeric powder |
a pinch of asofoetida ( opt ) |
salt to taste |
Directions:
1. Wash the egg plant .. make some diagonal cuts on it n push each of garlic inside the egg plant It depends how much u want to put garlic inside i add 2-3 cloves ... now if u like u can grill it or simply put it on the gas burner n let it cook changing side with help of tongs 2. In 10 minutes u will see the skin of eggplant like flakes n the inner part is soft n cooked 3. Remove it from the burner let it cool down for 2 minutes then with the help of tongs holding the cap of egg plant scrap down the skin with help of knife 4. Transfer the inner soft pulp to a bowl .... now u can just mash it or what i like to do is with a hand blender puree it along with the garlic 5. Next add some green chillies ( opt ) then in a small pan heat the oil add pinch of asofoetida (opt) then add cumin seeds let it crackle add red chilly powder n turmeric powder n then mustard seeds let it crackle for a minute as the oil is in the right temperature 6. Immediately pour it on the puree of egg plants add salt to taste stir and then add yogurt ( try to add Greek style if available ) or just strain the yogurt before adding making sure to remove all excess water from it 7. Garnish with some cilantro n ready to be served !!!! 8. Enjoy :-) 9. Tip : If u like u can add 1/2 onion finely chopped in the tempering just to add extra flavor ... 10.
