Ingredients:
1 1/2 cups uncooked egg noodles |
1 tablespoon sugar |
1/2 teaspoon cinnamon |
8 large eggs |
1/2 cup milk |
pinch of salt |
2 tablespoons unsalted butter |
1/4 cup raisins |
Directions:
1. Cook noodles according to package directions and drain in a colander; do not rinse. Coarsely chop noodles. 2. Stir sugar and cinnamon in a small bowl and set aside. 3. Combine eggs, milk and salt in a bowl; use a fork to beat until well-blended. 4. Melt butter in a large nonstick skillet over medium-high heat. Add noodles and raisins and cook, stirring, for 1 minute. Add and cook, scrambling until eggs are cooked through, 2 to 3 minutes. Sprinkle cinnamon-sugar on top and serve warm. |
