low fat, low carb Ingredients:
12 eggs |
1/4 cup 1% milk |
1/2 cup zucchini |
1/2 cup green onions |
3 oz canadian bacon |
1/2 cup low fat cheddar cheese |
Directions:
1. Spray muffin tin with olive oil spray. Chop Canadian bacon, zucchini, and green onions and put a little of each in the bottom of each muffin cup. Put a little of the cheese on top of the ingredients in each cup. Beat eggs in a bowl and add milk plus some salt & pepper to taste. Pour egg mixture over ingredients in each cup until full. Use a fork to stir the ingredients in each cup around a little bit. Bake at 375 F for 25-35 minutes until eggs are set. |
