Great low carb breakfast! Ingredients:
12 eggs |
1 cup grated low-fat cheddar cheese |
3 green onions, minced |
4 tablespoons mushrooms |
6 slices canadian bacon, chopped |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. In the bottom of prepared muffin cups layer the meat & veggies plus cheese & green onions. You want the muffin pan to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. 2. Break eggs into large measuring bowl with pour spout, beat well. Pour egg into each muffin cup until it is 3/4 full. Stir slightly with a fork to mix veggies & meat. Bake 25-35 minutes until muffins have risen & are slightly brown & set. |
