I have not tried this but it sounds really good. Enjoy. Ingredients:
1 whole roasting chicken |
1 chicken bouillon cube |
1 cup converted rice |
2 cans undiluted cream of chicken soup |
2 eggs |
2 large lemons |
Directions:
1. Place chicken in pan and cover with water then boil 2 hours. 2. Take out chicken and strain broth back into pan. 3. Take chicken off bones and cut into small pieces. 4. Add bouillon and rice to broth and cook until rice is tender. 5. Add chicken and soup and stir until dissolved. 6. Beat eggs and juice of lemons together in a bowl. 7. Add 1 tablespoon at a time of hot broth to egg mixture until eggs are warm. 8. Add to soup and cook a few more minutes. |
