this is a very simple dish, which can be used as an appetizer, side dish or with salad. well however you wish really. not at all complexed but lookes and tastes great! low fat and healthy too!!! Ingredients:
6 free range medium eggs |
1 bunch of small spring onion (chopped finely) |
2 tablespoons low-fat mayonnaise |
1 tablespoon low fat or 1 tablespoon nonfat yogurt |
pepper |
1 teaspoon curry powder, if required |
Directions:
1. In a medium sauce pan boil the eggs, shell and skin them and leave to for 5 minutes to cool. 2. once the eggs are cool to the touch, slice each one in half and using a teaspoon take out the yolk. 3. in a seperate bowl mix the egg yolk, spring onions, yoghurt, mayonaise and spice until smooth. 4. finally all you need to do is spoon the mixture into the craters in the egg and serve with whatever you wish; best with salad or soda bread. |
