This is one of my favourite breakfast recipes, but here in the States, I always get this reaction: What on earth is egg in a basket and how do I make it? Well, voila. bread slices: 1 for each person |
eggs: 1 for each person |
butter or margarine: enough to cover each piece of toast generously, on both sides |
Directions:
1. Butter both sides of each slice of bread. 2. Cut a hole out of the centre of each slice. 3. In a frying pan on medium heat, begin to fry the bread on one side only. You can also fry the circle you cut out of the centre, if you like; just make sure you butter it first, too. 4. Once the underside has begun to brown a little like grilled cheese, crack the egg directly into the hole. 5. LEAVE IT ALONE until the egg has a chance to cook on the underside. If you touch it now, the egg will spill out and your Egg In A Basket shall be ruined! So give it a few minutes before checking. 6. Once the egg has had a chance to form a seal on the underside, carefully maneouvre a nonstick spatula underneath the toast and flip quickly. 7. Once the egg has cooked enough to form a seal on both sides, it's up to you how long to continue cooking. As long as the toast has not burned, you can continue cooking until the egg yolk becomes firm, or you can serve runny. Personally I prefer it runny because it goes with the toast really well. 8. Butter the toast edges again, sprinkle with a pinch of salt and pepper, and serve with fruit, bacon, sausage, or oatmeal. |
