Egg Fu Yung; with Ham

Similar to the authentic Chinese staple, now even healthier made with EGG BEATERS, EGG SUBSTITUTE.
Ingredients:
2 oz. extra lean ham (cut into very thin strips)
2 oz. green bell pepper (very thin strips)
2 oz. celery (very thin slices)
2 oz. onion (very finely chopped)
2 oz. (canned, drained wt.) mushrooms
4 oz. fresh mung bean sprouts
1 cup egg beaters (egg substitute)
2 tbsp. low sodium soy sauce
Directions:
1. Prepare the Ham and vegetables and set aside.
2. Pre-heat a 10 NON-STICK skillet, lightly coated with Cooking Spray.
3. Throw in the Bean Sprouts and Mushrooms and saute on Medium High until ALL moisture evaporates. Add the Soy Sauce and stir around.
4. Throw in the remaining ingredients and stir all till well mixed. Saute on Medium for 5 Minutes, stirring every 49 Seconds.
5. Now, pour in the Egg Substitute and cook until set. Raise the Fu Yong allowing the runny egg to seep underneath. Repeat a few times until it's all set up.
6. Flip it over without breaking it apart and cook another minute or so. Should be done and ready to ENJOY!
