Egg-Free Chocolate Banana Loaf |

Ingredients:
1 1/2 cups all-purpose flour |
1/2 cup sugar |
1/3 cup unsweetened cocoa powder |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 cup low-fat buttermilk |
3/4 cup banana (mashed) |
1/3 cup canola oil |
2 teaspoons vanilla |
Directions:
1. Preheat oven to 350°F. 2. Coat 9x5 inch loaf pan (or 12-cup muffin tin) with cooking spray. 3. Whisk together flour, sugar, cocoa, baking soda, and salt in a bowl. 4. In a separate bowl, whisk together buttermilk, mashed banana, oil and vanilla. 5. Fold buttermilk mixture into flour mixture. 6. Scoop batter into prepared pan(s). Bake loaf 50-60 minutes (or muffins 18-22 mins). 7. Cool 5 minutes in pan, before serving. |
