So quick and easy. You can use any lovely fresh greens but the spinach makes a flower. Ingredients:
4 cups chicken broth |
2 small bunches fresh spinach washed with stems removed ( 2 cups) |
1 hard boiled egg yolk crumbled |
1 tsp dark sesame oil |
either 4 whole eggs or 2 eggs and 4 whites |
scallions sliced at an angle |
goes great with the quick blitz bread |
Directions:
1. In a sturdy pot heat broth until bubbly 2. Add sesame oil 3. add spinach 4. cook until limp and swirling 5. while bubbling slowly add scrammbed eggs 6. Serve really hot with scallions on top of each bowl 7. Sprinkle crumbled egg yolk on top |
