A very easy and tasty soup that takes no time to make. And healthy to boot! :) Enjoy! Ingredients:
4 cups low sodium chicken broth (use a good quality stock) |
1/2 teaspoon soy sauce |
1/2 cup cooked chicken breast, chopped |
1/2 cup frozen green pea (baby peas are nice) |
1/4 cup green onion, thinly sliced |
1 egg, lightly beaten |
Directions:
1. In saucepan, bring chicken stock and soy sauce to a boil. Add chicken, peas and green onion; bring to a boil again. 2. Remove from heat; drizzle in egg in slow steady stream. Let sit for 1 minute for egg to set. 3. Stir gently before ladling into bowls. |
