Egg Drop Soup w/ Spinach Ingredients:
6 cups low sodium chicken stock |
2 eggs |
2 egg whites |
1/4 lb bacon |
4 oz spinach |
4 oz arugula |
3 oz onions |
1 tsp white pepper |
3 oz garlic |
Directions:
1. render bacon 2. add onions and garlic, diced 3. add stock 4. simmer for 10 minutes 5. drizzle in the beaten eggs 6. add the spinach and arugula 7. simmer for 10 minutes 8. add pepper to taste 9. serve |
