Egg Custard Pie

To avoid soills, place pastry on oven rack first, then pour in custard.
Ingredients:
1 unbaked 9 inch pie shell
4 eggs, slightly beaten
2/3 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
2 1/4 cups milk
additional ground nutmeg
Directions:
1. Bake pastry shell at 400F for 5 minutes, let cool.
2. Combine eggs, sugar, vanilla, salt and 1/4 teaspoon nutmeg, beat until blended. Gradually stir in milk, mix well. Pour filling into pastry shell, sprinkle with nutmeg.
3. Bake at 400F for 15 minutes; reduce heat to 325F and bake an additional 35 minutes or until inserted knife comes out clean.Cool to room temp before serving . Store in fridge.
