These are really good and one of the recipes I use. I am a bagel lover so I vary the kind I make! Bagels are one of my soul foods and you can put anything on them and have a feast...enjoy!
Ingredients:
2 (1/4 ounce) packages active dry yeast (not fast acting)
2 cups warm water
3 tablespoons sugar
3 teaspoons salt
2 eggs
1 egg yolk
6 cups flour
1 1/2 teaspoons dry onion flakes (optional)
Directions:
1. Dissolve yeast in warm water. Add 2 Tbs. sugar and salt, dissolve.
2. Then lightly beat in the two eggs and stir well.
3. Add 4 cups of flour, stirring to make a smooth thin dough.
4. Lastly, add remainder of the flour to make a stiff dough.
5. Knead dough for 15 minutes and set aside to rise for 40 minutes.
6. Divide the risen dough into 20 equal parts and knead each separately to form a small ball. Push a flowered finger through the middle of each ball (one at a time) of dough and twirl it around your finger to make a bagel circle with a 1 to 1 1/2 inch hole. The outer diameter should be about 3 inches.
7. Let the bagels rise one more time for 20 minutes.
8. Bring 3 quarts of water to a boil and add 1 Tbs. of sugar to it.
9. Drop 4 - 5 bagels (no more) and boil for 4 minutes, turning each carefully.
10. Remove with a slotted spoon and dry on a paper towel.
11. Mix the egg yolk with 1 Tbs. water and beat well. Then brush with this mixture using a pastry brush.
12. Bake in a preheated 400 degree oven on a heavy cookie sheet for 20 to 30 minutes until golden brown.
13. I like to add onion flakes to my dough, but it is optional. :) Jazz it up a bit! Or not!
