4 hard-boiled eggs, peeled and chopped |
1/4 cup finely chopped watercress leaf |
4 green onions, minced |
2 tablespoons mayonnaise |
2 tablespoons sour cream |
salt and pepper |
6 slices white bread |
2 tablespoons butter, softened |
1 sprig watercress |
Directions:
1. In a small bowl, combine egg, watercress, onions, mayo and sour cream. Season with salt and pepper. 2. Place bread on a cutting board and cut into 2 inch rounds. 3. Spread butter lightly over bread and then spoon egg mixture over the top. 4. Garnish each with a watercress sprig. |
