This is easy and very light.
Ingredients:
1 teaspoon light oil
1 slice bread
1 bunch mixed greens
1/4 cup egg substitute
1 tablespoon organic mild salsa
salt and pepper
Directions:
1. Cook the egg in the light oil.
2. Toast the bread.
3. Put the greens on the toast, top with the egg and salsa.
4. Salt and Pepper to taste.
5. Bon Appetit!
