Healthy Breakfast Frittata.
Ingredients:
18 ounces shredded hash browns
4 ounces skim milk
1/2 cup eggbeaters
8 ounces reduced-fat cheddar cheese , shredded
1/2 cup onion
4 strips bacon
1/2 teaspoon salt
1/2 teaspoon chili powder
4 green onions, chopped
Directions:
1. Whisk together the eggs and milk in a large bowl. Stir in hash browns, 3/4 cup of the cheese, onion, 2 tablespoons of the bacon and the spices. Coat an 8 X 8 baking dish lightly with cooking spray and add egg mixture. Bake at 350 for about 45 minutes or until a knife comes out of the center clean. Sprinkle with top with the remaining cheese, bacon and green onions. Let stand for several minutes before cutting. Cut into 6 equal portions.
