A healthy way to start the New Year. High in soy protein and easy to make. Ingredients:
1 1/2 cups edamame |
2/3 cup corn |
1 small tomato |
1/2 cup cucumber |
2 tablespoons olive oil |
1 tablespoon vinegar |
1 tablespoon spicy mustard |
Directions:
1. 1. Cook edamame and corn in microwave until done ( about 3 minutes). 2. 2. Chop tomato and cucumber. 3. 3. Add oil, vinegar and mustard. 4. 4. Serve immediately. |
