Ingredients:
6 cups chicken broth or 6 cups vegetable broth
2 cups shelled edamame beans (fresh cooked or frozen, thawed)
1 cup finely sliced white mushroom
1 teaspoon grated fresh ginger
1 tablespoon soy sauce
dark sesame oil (a dash)
2 tablespoons minced fresh cilantro
salt
pepper
Directions:
1. Combine all ingredients in a large saucepan over high heat; stir well.
2. Bring to a boil; decrease heat to medium; simmer 15 minutes.
3. Serve in shallow bowls.
