2 tablespoons peanut oil |
1 large shallot, thinly sliced |
1 large egg, beaten |
4 cups hot cooked jasmine rice |
1/2 cup edamame (fresh soybeans) |
1 carrot, shredded (about 1/2 cup) |
2 green onions, chopped (about 1/4 cup) |
2 tablespoons soy sauce |
2 tablespoons dark sesame oil |
Directions:
1. Heat peanut oil in a wok or large skillet over medium-high heat. Add shallot and egg; cook 1 minute or until egg is set, stirring constantly. Add rice and next 3 ingredients; cook 1 minute, stirring constantly. Add soy sauce and sesame oil; cook 1 minute, stirring constantly. |
