Ingredients:
1/2 teaspoon salt |
1 cup frozen shelled edamame, thawed |
3/4 cup uncooked couscous |
1 1/2 tablespoons minced fresh parsley |
1/2 teaspoon grated lemon rind |
1 tablespoon fresh lemon juice |
1/8 teaspoon freshly ground black pepper |
Directions:
1. Bring 1 cup of water and salt to a boil in a medium saucepan. Add the edamame, and cook 30 seconds. Stir in the couscous and the remaining ingredients. Remove the mixture from the heat, cover it tightly with a lid or aluminum foil, and let it stand for 5 minutes. Fluff with a fork before serving. |
