I got this recipe in my e-mail from Health magazine. I'm thinking it would make a nice side dish to baked fish. Ingredients:
1/2 teaspoon salt |
1 cup frozen shelled edamame, thawed |
3/4 cup couscous, uncooked |
1 1/2 tablespoons fresh parsley, minced |
1/2 teaspoon lemon rind, grated |
1 tablespoon fresh lemon juice |
1/8 teaspoon fresh ground black pepper |
Directions:
1. Bring 1 cup of water and salt to a boil in a medium saucepan. 2. Add the edamame, and cook 30 seconds. 3. Stir in the couscous and the remaining ingredients. 4. Remove the mixture from the heat, cover it tightly with a lid, and let it stand for 5 minutes. 5. Fluff with a fork before serving. |
