Edamame and Browned Garlic Spread |

Good with crackers, toasted baguettes or fresh vegetables Ingredients:
1 tablespoon extra virgin olive oil |
6 garlic cloves |
1 cup edamame, shelled |
1/2 teaspoon salt |
1 lemon, juice of |
Directions:
1. Heat olive oil in a nonstick pan over medium-high heat. Saute garlic until golden brown, 2-3 minutes. Add edamame, and cook another 3 minutes. Add salt and lemon juice. 2. Remove from heat and transfer everything to a food processor. Puree until smooth. Add a tablespoon of water if spread is too thick. Add salt to taste. |
